Si algo nos mantuvo entretenidas en Palm Beach, además del trabajo, fue el ingrediente principal... el staff local de la isla.

Si nos habrán hecho reír, enojar y volver a reír.

Ah Sey, cuando llegamos fue nuestra mentora, con 4 años de trabajo en el bar, es una de las más antiguas (con tan sólo 26 años). Ah Sey conoce el bar de punta a punta y el manejo de los tiempos de cada turno.

Mao, una de nuestras favoritas, nos ayudó desde el comienzo con la preparación de los tragos, a los cuales les escapamos al principio como unas campeonas. Mao no paraba nunca de trabajar, siempre encontraba algo para limpiar, acomodar, para hacer y siempre atenta a los clientes del bar.

Aem, el mejor dúo junto a Mao. Nunca te van a faltar servilletas en la mesa y una sonrisa de Aem al mirarte. No habla inglés pero siempre busca el modo de ayudarte y de tratar de entenderte.

A Fa , la más capa de la cocina. No sabemos qué sería de Palm Beach sin ella. Cuando hay noches de 100 personas, Afar está presente coordinando todo el staff. Verle trabajar es para agarrar los pochoclos y disfrutar. Dos, tres, cuatro gritos (se hablan gritando) y los 100 platos están listos.

Ey Vorn, una mujer dulce, que empezó lavando los platos y en seguida la pusieron a cocinar. Sus comidas son muy ricas y siempre con una sonrisa y una charla al verte.

A Poush, nuestra cocinera estrella de tan solo 16 años. Si le decías sin picante, era una de las pocas que entendía lo que significaba y así podíamos disfrutar realmente de nuestra comida. A veces le pedíamos nuestro querido Bunny Chow pero la agarrábamos sin ganas de cocinar. Riéndose y hablando cero inglés nos proponía otra comida.

Bee, otra de las más chicas, cocinaba muy bien, pero era la chilli girl. De origen tailandés no entendió jamás que no chili era no chili... ni siquiera "un poquito" como ella decía. (Jamás pudimos comer una comida de Bee sin picante)

Lina, como Savon, una de las mujeres más dulces del staff y también nuestra vecina. Siempre te ayudaba con señas porque no hablaba inglés y te enseñaba frases en Khmer. Mayormente lavaba los platos pero cuando se necesitaba un par de manos más en la cocina, ella estaba presente.

Bross Morn, un niño de 21 años, que trabajaba en la cocina y también era el sereno del bar por las noches.

Yung, incansable trabajador en el bar durante la tarde noche y desde muy temprano en la mañana haciendo incontables tareas alrededor del resort. No sabíamos cómo su cuerpo aguantaba tantas horas de trabajo y así y todo le veías bailar, cosa que le encanta.

Vach, nunca se cansaba de aprender. Lo escuchabas practicar inglés, te preguntaba frases, palabras y siempre quería hacer las cosas él. Cuando no sabía algo, disculpándose primero, te pedía ayuda después.

Than, el party boy del bar. Cuando llegamos trabajaba en el bar y se encargaba de las excursiones (en bote o la caminata a la cascada). Si estaba en el turno de la noche, sabías que tenías fiesta asegurada. Siempre impecable, perfumado y sonriente.

Lin, personaje enigmático de Palm Beach. Es como Dr. Jekyll y Mr. Hyde. Por las mañanas totalmente serio, sin mediar palabra, aparecía en el bar, agarraba su bolso y se iba a Sihanoukville a dejar y buscar grupos de personas. Durante las noches, prendía las luces de colores móviles y Wannabe (Spice Girls) a todo volumen, levantaba a todas las personas de sus mesas y no paraba de bailar y brindar.

David, no es staff local, ni trabaja en el bar. Es un hombre, amigo de Mireille y Roy, que vive en el resort hace unos 4 años. David tiene historias y charla para rato. No le gusta el ruido y si hay algo que para él los turistas hacen es eso: ruido. David nos ha hecho de los mejores regalos que nos pueden hacer: pan casero vegano. Cuando se iba a Kampot a visitar amistades, volvía con pan vegano para nosotras.

Así que Palm Beach está lleno de historias con cada una de estas personas. Las horas, días y meses que pasamos en la isla son parte de un equipo de trabajo que quieras o no te transforma.

Sometimes we asked her our dear Bunny Chow but we catched her without wanting to cook. Laughing and speaking zero English she proposed us another meal. Bee, another of the young girls, cooked very well, but she was the chilli girl. Of Thai origin, she never understood that no chili was not chili ... not even "a little" as she said. (We could never eat a spicy Bee meal)

Lina, like Savon, one of the sweetest women in the staff and also our neighbor. She always helped us with signs because she didn't speak English and also taught you phrases in Khmer. She mostly washed the dishes but when a couple more hands were needed in the kitchen, she was present. Bross Morn, a 21-year-old boy, who worked in the kitchen and was also the serene of the bar at night. You can hear everyone calling his name, Pramon this, Pramon that, Pramon here, Pramon there. When he went to Kampot to visit friends, he came back with vegan bread for us.

So Palm Beach is full of stories with each of these people. The hours, days and months we spend on the island are part of a work team that want it or not change you.
